What makes a coffee a coffee speciality ?

Coffee specialties are more than just a drink: they are a sensory experience that meets the highest quality standards. But what criteria determine whether a coffee is considered a specialty?
Overall score - According to the standards of the Specialty Coffee Association (SCA), a specialty coffee must achieve at least 80 out of 100 points.

And how are these points evaluated? The coffee has 10 attributes, each attribute is evaluated from 1 to 10 and if it exceeds 80 points, it is called specialty coffee. These characteristic attributes are evaluated by professional coffee tasters, the so-called Q-graders.

  • Acidity - A balanced and lively acidity gives the coffee freshness and depth.
  • Body - The mouthfeel varies from light to full-bodied and influences the perception of the aromas.
  • Taste and sweetness: a complex profile with fruity, chocolatey or nutty notes and natural sweetness.
  • Balance - Harmonious interplay of all characteristics without dominant individual notes.
  • Aroma: Rich and complex aromas that develop during grinding and preparation.
  • Uniformity and cleanliness: consistent taste without off-flavors or impurities.
  • Aftertaste - A long lasting and pleasant impression that invites you to continue drinking.
